On a 1995 C220, is there any proper process or precautions when removing the ECU?

Disconnect the battery, remove certain screws, etc...

I want to remove it to get some numbers off of it, but don't want risk damage.

disconnect the battery, gently unplug all the harnesses, and there should be either 2 or 4 10mm nuts securing it to the bracket.
