is there a way for me to hook up my amp (alpine v-power) so that i only use one set of rca's for the 4 interior door speakers. i want the front speaker rca output on my head unit to go to all four channels, is this possible?

YES.... i believe some of the older alpine v-12 amps had switchs on the side which allowed one set to run all four channels. look on the side of the amp where the gains, crossovers are and see if you see a switched labels 1-2 3-4 1-2 +3-4 on the side. if so you can slide it to the right setting and play all speakers. If the amp doesn't you can easley buy two sets of Y adapters for your rca's to fix that. you will need 2 one female to 2 males . this will turn your rca to 2 sets via one rca  the only thing is you would lose fade if they are controlling fronts and rears but you can compinsate with the gain controls to balance them out.
