Gonna replace the thermostat in my C230. The thermostats I see all say "87 degrees". Is that the
temperature at which the thermostat opens or is it the temperture your car will now run at with this thermostat?
My car runs at 80C on the button and want to keep it that way.

If it's at 80C where you like it, why replace it? When you take it out you should see a temp on it, just get the same one.

That's the temp it opens at. Install it, it's fine.

My thermostat makes a rattling noise on cold start up but once warmed up it goes away....My temp runs right on 80...Should I replace it?

Yes. You should.

If it aint broke and you suspect it to be anything less than perfect, replace it before it breaks and does a heap of other damage. Not like as if its expensive.

Yeah I replaced the thermostat for dirt cheap anyways. Easy fix.

Good move ;) The one thing that keeps a Merc bullet proof reliable is not leaving things til they fail and cause further damage.

Having said that, ive neglected my 95 C180 or some time now and its still running strong, it no longer holds enough value to justify any expense. While its still a great car, its worth $1,000 tops, its no longer my primary vehicle, and if it dies, it certainly doesnt owe me a cent. Its been without doubt the cheapest and best car ive ever owned, and itll take a hell of alot to top that.

I should add it has NEVER EVER broken down, and ive spent about $1,000 on replacement parts in the past 11 years.
